The big differences between the two are in the Metrics and Last Sim utilities. OOTPOU doesn't have the career metrics that StatsLab does. Things like the filterable leaderboards, draft history, park factors, and the additional player stats like Win Shares, OPS+, ERA+, etc. Newer versions of OOTP may have some of the additional stats but not sure. So basically, we're forgoing improvements made to the core game mechanics that provide the basis for this entire league, in favor of window dressing like stat of the day and filterable leaderboards.
