Where do you see the results of the interviews?

On the player's profile.
You'll see the ratings are a little more refined, and you'll see if your scout thinks they are overrated/underrated

Can you interview players more than once? for even more specific results?

As far as I know, you get the first 60 interviews and that's it.

Yep, you only get 60 interviews and you cannot interview a player more than 1 time.
