Is there an in-game learning curve if I decide to switch from 3-4 to 4-3. I don't think my linebacker depth/skill is good enough for the 3-4 and I'd like to know if I change the scheme do the players have to "learn" to play it?

Not really. . .a lot of people play the three four because it's easier--allegedly--to find a good nt, two de's and some nice linebackers. . .
no real learning curve. . .with my Indy team in the DFL, my d-line was decimated by injuries--seven on i.r.--and I switched to the three four out of necessity. It's a close race, but I'm still the division leader and just switched back to the four three.

I'm switching from the 3-4 to 4-3 this season. I needed another DL or LB and felt like the DT class was very deep this year. I also know how the 4-3 works, so will have an easier time game planning for it. I let the CPU handle most of my gameplans last year, but want to start doing my own this year.

If i have a decent NT, will i see a performance drop if i switch him to DT when i switch to the 4-3?
