Now Strick, to argue the other side of your point. Your best back is usually the guy put in for short yardage situations. Those runs can bring the YPC average down a bit. So maybe that's the reason for your observations.
Also, I have seen another theory floating. It is true that the 2nd back often has better YPC numbers than the starter. I have seen the argument that it is because he comes into the game fresh, while the starting back has worn down the defense a bit.
Anyhow, there is no way to know 100% without doing some serious testing. And even if you are right that you can get your best back better YPC numbers, the question then becomes if it will give the team overall better results. I know at least one example of an offense that will put up fantastic individual numbers but overall the benefits to the team are rather dubious.
